A Veggie Soup For This Vegetable Soup Recipes Page

Here is a vegetable soup for this Vegetable Soup Recipes page :)





I made this one for me and Benji today. I also made a salad to go with it.

Ingredients (for two people)

10 medium organic potatoes

1 carrot

1 cup/2.3dl fresh baby spinach

A handful fresh dill

Some pepper

1/2 lemon

Directions

Peel the potatoes and boil them with the carrots (you can leave some peel on because potato peel is healthy, but don't leave so much though - if you don't want the soup to have a bitter taste...)

Take out 8 of the potatoes when they are ready and cut them up into small pieces.

Let the rest of the potatoes and the carrots boil for another 10 minutes or so.

Cut up the fresh baby spinach and the dill.

When the 10 minutes are over, pour out most of the boiled water, but leave 1 cup or about 2.3 dl. Mash the potatoes and carrots together with the remaining water. Add the spinach, the dill and the cut up potatoes. Add some pepper too if you like.

Now let all this simmer for about 5 minutes.

Before you serve, add the juice of half a lemon to the soup.
