Cold Tomato Soup

This is an easy raw vegetable soup recipe for this Fruit and Vegetable Soup Recipes page. It is a perfect soup for the summer months.






You will need:

1 cucumber

1 zucchini

2 green bell peppers

10 ripe tomatoes

1/2 yellow onion

2 garlic cloves

3 tablespoons olive oil

2 tablespoons vinegar

Water (optional)


Directions:

Peel the cucumber and the zucchini.

Cut the bell peppers in half and take away the seeds.

Cut the tomatoes in halves too.

Peel the onion and the garlic.

Put all the ingredients in a blender or use a hand blender to mix all the vegetables together.

Add olive oil, the minced garlic cloves, the vinegar as well as some pepper is you like. If you feel the soup is too thick, you can add some water.

Put the soup in a bowl and keep it in the fridge until its cold.

If you like, you can add some ice cubes when serving.

I actually found this recipe in a magazine here in Finland called "Huvudstadsbladet". The recipe originally had some soaked bread in it too and some salt, but to me this is totally unnecessary, and it is much healthier without the bread and the salt anyway. But of course you can try whichever version you like.
