A research group led by Luigi Fontana M.D, Ph.D., at Washington University School of Medicine in St. Louis, has found that although raw foodists have low bone mass, their bones have normal bone turnover rates. They also found that people who eat raw have less inflammation in the body as those eating a regular diet.
Another interesting observation was that those who eat raw have lower levels of a growth factor called IGF-1. High levels of this growth factor have been linked to a higher risk of breast and prostate cancer.
