Mushroom, Avocado, Almond

Here is another salad from Kate Wood's book "Eat Smart Eat Raw". Serves 1 - 2.

This salad is high in protein.

Mushroom, Avocado and Almond Salad

Ingredients:

200 gram (6 1/2 oz) torn lettuce

1 bunch chopped watercress

125 gram (4 oz) almonds

1/2 avocado

2 tablespoons of rinsed and torn dulse

100 gram (3 1/2 oz) shredded oyster mushroom or other kind of salad mushroom

30 grams (1 oz) alfalfa sprouts

60 grams (2 oz) halved cherry tomatos

2 tablespoons pitted olives


Toos all the ingredients together.


Add a dressing - for example the one below from the same book:

Dressing

Ingredients:

1/2 bunch of parsley

1 tablespoon of basil

1/4 onion

30 grams (1 oz) almond butter

1/4 avocado

1 tablespoon extra virgin olive oil

1/2 tablespoon lemon juice

1/2 tablespoon vinegar

1 tablespoon tamari

1/2 tablespoon nutritional yeast flakes

1/2 teaspoon kelp

125 ml (4 fl oz) water


Put all the ingresients into a blender and blend for some minutes.


This dressing is very nutritious and will make the salad a super salad :)

When making this for myself, I would leave out the tamari from the dressing though, because I think it is way too high in sodium.

I would also leave out the nutritional yeast flakes, because I simply do not know what that is and would not go and try to find it in a health food store just to make this dressing.

So feel free to leave out or add whatever you like when making this.
