Vegetables are highly nutritious for the human body because they have a high amount of vitamins and minerals.

Many yellow, green and orange vegetables are high in calcium, potassium, iron, magnesium, vitamin B, Vitamin A, K and C.

Vegetables are high in antioxidants. Antioxidants help prevent certain diseases and cancers, prevent stress and help the body have a strong immune system.

In addition, vegetables contain fiber such as cellulose and pectins—fibers that absorb water in the colon. This kind of fiber helps with bowel movements and helps to prevent constipation, hemorrhoids and other rectal conditions. When bowel movements are regular and smooth, there is less chance of getting colon cancer.

As you can see from there vegetable nutrition facts, a major reason to eat more fruits and vegetables is their nutritional value. The vitamins and minerals they contain are good for our bodies and minds.

Many vegetables are excellent sources of vitamins A and C and also give plenty of needed fiber for our bodies. And many vegetables along with most fruits have a high content of the B vitamin; a vitamin that can help lower the risk of some very serious birth defects and help with the nervous system.

Also, most vegetables and fruits have other qualities that help to improve our health--such as bananas and potatos that help lower blood pressure and in some cases can be eaten with minimal preparation such as lettuce, carrotts, potatos and fruits like grapes, raisins and bananas.

Always remember that vegetables and fruits do need to be washed before eaten so that dirt and bacteria can be removed. Even if they are organic, but naturally you dont have to wash organic veggies and fruits as much as you would conventional ones.
