Vegetable Nutrition Facts

Want to learn more about vegetable nutrition facts?

Great! Because vegetables are oh so nutritious!



They sure pack a lot of nutrients per calorie!

So… don't be afraid to eat lots and lots of veggies :)

Speaking of calories… vegetables are very low in calories.

This makes vegetables an ideal diet food.

In fact the fat percentage of veggies is only 1%.

Vegetables make an ideal food for anyone anytime.

They don’t contain any cholesterol or any saturated fat. Instead they are packed with vitamins, minerals, and many thousands of phytochemicals.

For example:

There are many thousand phytochemicals in one little tomato

Those phytochemicals fight off cancer better than anything else you could put in your mouth!

All vegetables are healthy for you. And they are also all healthy in different ways. What one vegetable doesn’t contain, another does!

So it's a good idea to eat many different kinds each day.

Veggies also work together. Together many of them are more powerful than alone. For example, eating a carrot is really good for you, and so is eating a tomato. But eating them together is even better! This is because the phytonutrient lycophene in the tomato helps in the absorption of the beta carotene in the carrot. This makes them a perfect combination! Remember that when making your salad today :)

Another good thing to remember is, if you are looking to get more iron out of your vegetables (especially important for vegans and vegetarians), combine an iron rich veggie with a veggie high in vitamin C.



Best iron-rich veggies

1 medium artichoke 3.9 mg

100 gram parsley 3.6 mg

Also worth mentioning are beans, beet greens, spinach, kale and broccoli.



Best vitamin C-rich veggies

1 red sweet pepper 320 mg

100 gram parsley 182 mg

1 chili pepper 109 mg



Caught a cold?

Bell peppers will help!

Some vegetables are higher in vitamin C than some fruits. As I wrote above, one bell pepper has about 320 mg vitamin C, which is much higher than for example an orange (75 mg) or a kiwi (74 mg). So next time you catch a cold, you know what to do!
